'I can't wait to see who or what shows up': All Hallows Eve returns to Midway Village in Rockford

ROCKFORD — It's time to get ready for some spooky fun again this year at Midway Village Museum.
The annual All Hallows Eve celebration returns from noon to 6 p.m. Oct. 22 with trick-or-treating around the museum's Victorian Village, 6799 Guilford Road. Admission is $6 per person. Children 4 and younger enter free, and it's free for museum members.
“We are excited to host the Rockford community again for in-person trick-or-treating in the Victorian Village, and look forward to seeing all of your fun and spooky costumes," said Luke Fredrickson, marketing director for Midway Village.

This 35-year-old tradition began in 1987. Approximately two dozen volunteers hand out Halloween treats from decorated buildings to 4,000 to 5,000 visitors.
"I love coming to this event because my kids can run around and have fun in an enclosed area," said Jennifer Arnold of Rockford. "I don't have to worry about them crossing a busy street or having to watch out for traffic. All three of my kids look forward to this each year."

The 13-acre Victorian-era village becomes home to all sorts of costumed characters for the annual event.
"In previous years, we've seen the Ghostbusters, the Sanderson sisters from 'Hocus Pocus' and even a 7-foot-tall gorilla. Some of the costumes are extremely creative," said Chuck Jones of Rockford. "I can't wait to see who or what shows up this year."

What’s in it: Make it your own. I loved mine with mushrooms, Swiss cheese, onion, lettuce and tomato.
Why it’s popular: They use high-quality ingredients but keep their prices low. It's a small town bar with friendly atmosphere. I think that's the reason why everybody loves Bootie's. Not only are their burgers cooked perfectly, flavorful, juicy and delicious -- but all of the sandwiches that my family ordered were just as phenomenal.
Pro tip: They start serving lunch at 10:30 a.m. on Saturdays. That's the perfect time to head in for a cold beer or Bloody Mary and a burger or one of their other great sandwiches.
They also serve prime rib the first Saturday of every month and have an extensive fish and seafood fry every Friday night, including fried or baked cod, bluegill, walleye, salmon and shrimp.

Winnebago County Animal Services puts out urgent call for adopters as shelter hits max capacity

ROCKFORD — Winnebago County Animal Services put out a warning Monday that its shelter is at critical capacity with every kennel full and some doubled up.
Nearly 30 new pets, including 23 dogs, entered the shelter since Friday, Animal Services wrote on Facebook.
"There are over 70 dogs in the building and we have had to double up kennels giving dogs limited space," Animal Services wrote on Facebook. "Our animal care staff and volunteers are tired, stressed, and heartbroken to have to put dogs in smaller kennels."
The organization has lowered its adoption fee to $25 for select dogs and cats with the Bissell Pet Foundation paying the difference.

Authentic-Style Mexican Dishes For Cinco De Mayo At Home
My Favorite Margarita Recipe
(Recipe makes two glasses – multiply recipe by 6 for pitcher)
2-3 limes (for juice / garnish)
4 oz tequila
1 oz agave nectar (or simple syrup)
2 oz triple sec (or grand marnier)
Coarse salt / Tajin
3 quart mason jars (one with a lid)
ice
Begin by placing the salt & Tajin in a small bowl. Mix the two well. Cut one lime into quarters. Rub one quarter lime around jar lip and then turn jar over and dip in the salt mixture. (Do this for 2 jars)
In the third jar, add in the following ingredients:
Ice
2 oz Tequila
½ oz Agave Nectar (or simple syrup)
1 oz Triple Sec (or Grand Marnier)
Juice of ½ Lime
Replace the lid firmly and shake vigorously to mix. Pour contents into first jar and repeat the process for the second jar. Garnish with lime and serve.
Like the heat? Try adding in some Jalapeno juice and a few slices of fresh or pickled Jalapeno to this recipe. Like it sweet? Add in some strawberry puree to freshen it up.
Baked Tortilla Chips
(these won’t last long so you may want to double the batch!)
1 (12oz) Package Corn (or Flour) Tortillas
1 Tbsp Olive Oil (Use whatever oil you like)
3 Tbsp Lime Juice
Small Clean Spray Bottle
1 tsp Salt
Full Cookie Sheet (18x26) Covered with Aluminum Foil Shiny Side Up
Preheat oven to 350 Degrees. Cut Tortillas into equal triangle shapes (about 6-8 per tortilla). Place cut pieces on prepared baking tray. Combine the oil and lime juice in your clean spray bottle. Spray each “chip” until lightly moistened. Sprinkle on salt if desired. Place tray into oven for 7 minutes. At the end of 7 minutes turn pan and bake for another 8 minutes or until chips are lightly browned and crispy. Serve with your favorite dip!
Now that you have those delicious, crispy chips, it’s time to create something to dip them into! But take note; the following recipes are identical with just a few minor tweaks. Therefore, the Pico De Gallo recipe is the base for all three recipes listed below!
World's Easiest Pico De Gallo Recipe
(better make a bunch if there’s a group – it goes fast)
1 small onion (Chopped)
2 roma tomatoes (Chopped)
½ bunch of cilantro (finely chopped)
2 cloves garlic (finely chopped)
1 jalapeno (seeds removed) (finely chopped)- optional
juice of 1 lime
2-3 tbsp olive oil
salt and pepper to taste
In a large bowl, add all ingredients stir to thoroughly combine. Cover and refrigerate for at least one hour to allow all of the flavors to incorporate.
World's Easiest Salsa Recipe
(this one is a real crowd pleaser for sure!)
1 small onion (Chopped)
2 roma tomatoes (Chopped)
½ bunch of cilantro (finely chopped)
2 cloves garlic (finely chopped)
1 jalapeno (seeds removed) (finely chopped)- optional
juice of 1 lime
2-3 tbsp olive oil
salt and pepper to taste
2-6 tbsp tomato paste
1 16 oz can v-8 juice
In a large bowl, add all ingredients except tomato paste. Stir to thoroughly combine. Cover and refrigerate for at least one hour to allow all of the flavors to incorporate. After one hour, remove from refrigerator and check consistency. If it needs to be thicker, you can add 2-6 Tbsp of tomato paste without compromising the flavor!
World's Easiest Guacamole Recipe
(wholly guacamole! this is good! i hear that alot)
3 ripe avacadoes
1 small onion (Chopped)
2 roma tomatoes (Chopped)
½ bunch of cilantro (finely chopped)
2 cloves garlic (finely chopped)
1 jalapeno (seeds removed) (finely chopped)- optional
juice of 1 lime
2-3 tbsp olive oil
salt and pepper to taste
Cut avocadoes in half, remove seeds and scoop out flesh into a large bowl.
Add all other ingredients and stir to thoroughly combine. Cover and refrigerate for at least one hour to allow all of the flavors to incorporate. If guacamole appears to be turning brown, you can add additional lime juice.
No Salt Taco Seasoning Recipe
(you can use this stuff on anything!)
1 tbsp chili powder
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp dried oregano
1 tbsp paprika
1 tbsp ground cumin
1 TSP GROUND BLACK PEPPER
1 TSP red pepper flakes (optional)
This recipe is so simple, because everything is in equal portions. Pour all spices into a large bowl and mix thoroughly to combine. Store in airtight containers (I use mason jars) for up to 6 months!
Tres Leches (Mexican Milk Cake)
(I’m not much of a baker, which is why i love this recipe!)
1 white sheet cake (cooled)
1 ¼ C whole milk
½ c heavy cream
1 can (14oz) sweetened condensed milk
1 can (12 oz) evaporated milk
whipped cream / whipped topping
cinnamon powder
I buy my cakes from the bakery at the grocery store. I just ask them to be sure there is NO FROSTING on the cake. You can also use a packaged mix or if you’re good at making cakes……….go for it!
Once the cake is cooled. Poke holes all over the top of the cake with a fork or skewer. In a bowl, mix milk, cream, sweetened condensed milk and evaporated milk together. Pour mixture over the top of the cake. Top cake with whipped cream (or whipped topping) and sprinkle cinnamon powder over the topping. Refrigerate overnight before serving for best results. Cake must be refrigerated at all times to prevent spoilage.

Kentucky Oven "Fried" Chicken Wings

I don't know about you, but I've always loved KFC original recipe chicken. However, now that I'm older, everything I eat thats fried seems to stick to my middle. So for me, no more fried foods allowed on my daily diet. I mean, once in a while, sure. You've got to treat yourself sometimes.
Yesterday, I had a hankerin' for some chicken wings and I wanted the "KFC" style flavor that I love so much. I am in no way saying that this the Colonel's secret recipe. It's just a recipe that I've formulated over the years that comes pretty close flavor wise and I love cooking chicken this way. You get all the crispy deliciousness without any of the guilt!
KFC Style Chicken Wings
1-2 lbs of Chicken Wings (Drummies / Flats) - rinsed and patted completely dry
Baking Sheet, Aluminium Foil, Wire Cooling Rack
4 Tbsp Baking Powder
1/2 tsp EACH
- Celery Salt**
- Dried Basil
- Garlic Powder
- Dried Thyme
- White Pepper
- Black Pepper
- Paprika
- Lawry's Seasoned Salt**
- Oregano
- Ground Ginger
- Dry Mustard [I didn't have any so I left it out]
** If you are trying to keep your salt intake low, you can substitute No Salt Seasoning / Celery Seed**
Cooking Spray (Your choice - I use either Olive Oil or Coconut Oil)

Preheat your oven to 425 Degrees (F)
Use a large baking sheet covered with aluminum foil (to keep the mess to a minimum) then set a wire cooling rack on top. This will elevate the chicken above the foil which will allow for better air circulation during cooking which in turn means the chicken cooks more evenly. Spray the rack with your favorite cooking spray to keep wings from sticking.
Rinse then pat dry your chicken wings with paper towels and set aside. I typically use a baking pan lined with paper towels, dry the wings, then cover them with paper towels while mixing my dry ingredients to be sure the wings are nice and dry before "breading" them.
Next, in a large bowl combine dry ingredients listed above and mix well. Pour your seasoning mixture into a large zip top bag. Add 1/2 the chicken and shake to coat well. Remove the "breaded" pieces and place on the greased cooling rack. Continue this process until all pieces are coated and placed on the rack. Discard any remaining seasoning mix.
Spray the chicken pieces with cooking spray on top to assist in the crisping process. Place baking sheet in the oven on the middle rack for 30 minutes.
After 30 minutes, flip wings with tongs, spray the other side with cooking spray and place back in oven for another 30 minutes.
Your wings should now be crispy, crunchy and delicious. You can coat them in any type of sauce you wish, but these are soooooooooo good that sauce is definitely not a requirement.
One final note: make sure that you make enough wings for about 12 per person if you are making these for an event cuz they will go fast! Enjoy!
Beloit Winter Farmer's Market

If you're like me, you can't wait until the farmer's markets are open to get all those beautiful homegrown vegetables, homemade cheeses, jams and jellies and of course baked goods! But did you know that the Beloit Farmer's Market actually has an indoor Winter location?
Every Saturday from 9am to Noon From November to April you can find your favorite vendors from the Summer market at their indoor location. The Downtown Beloit Association building located at 557 E. Grand Avenue in Beloit.

5 Savory Slow Cooker Soups For Fall
It’s fall, and you know what that means? Soup season! What better way to use your slow cooker than to make a hot bowl of homemade soup. With just a few simple ingredients and about 15 minutes of prep time, you can have a hearty, healthy meal that the whole family will enjoy.
ITALIAN WEDDING SOUP
While this recipe isn’t in the traditional style, I hate making tiny little meatballs and have instead adapted the recipe to add just a tiny bit of meat to the mix instead. I have used both sausage and hamburger in this recipe and they are both great. You can also substitute ground turkey or chicken.
INGREDIENTS
1 lb Ground Beef or Mild Italian Sausage
8 Cups Chicken Broth
3 Large Carrots (peeled / diced)
2 Stalks Celery (finely diced)
1 Medium Onion (diced)
1 Handful Fresh Italian Parsley (chopped)
1 Tsp Dried Oregano
1 Tsp Garlic Powder
1 8 oz bag of Spinach (washed / chopped)
1 Cup tiny dry pasta (Acini di pepe, ditalini, etc.) – cooked and set aside
¼ Cup Freshly Grated Parmesan Cheese
In a large skillet, brown the meat just until cooked through. Add meat and drippings to slow cooker. Add in all remaining ingredients except for the pasta and Parmesan Cheese. Cook on low 5-8 hours depending upon your cooker. Add pasta and parmesan cheese and stir to incorporate cheese. Serve with a warm roll or crusty bread. Serves 6-8.
BEEF BARLEY “STEWP”
I love beef barley soup and this is my favorite because it’s thick like a stew but still technically a soup. You can modify this recipe to omit the beef as it’s chock-full of veggies or substitute chicken instead
INGREDIENTS
1 lb Beef Stew Meat (I dice it finely when I get home from the store or ask your butcher to do so)
4 - 6 Cups Beef Broth (I usually use 2 boxes of broth)
3 Stalks Celery (diced)
3 Large Carrots (diced)
1 Medium Onion (diced)
1 Can Stewed Tomatoes (with juice) – I usually cut them up because they can be kind of big pieces.
1 Tbsp Worcestershire Sauce
¼ Tsp Dried Thyme
1 Bay Leaf
¼ Cup Red Wine (optional)
1 Cup Quick Barley (Pre-cooked and set aside)
It’s usually best to brown your meat ahead of time to give it more flavor, but since this is a slow cooker recipe, it’s not necessary. Add all ingredients to slow cooker with the exception of the barley. Barley is a grain and will absorb the liquid and thicken your “stewp” so I always wait until about an hour before we are ready to eat to add it. I use quick barley and follow the instructions on the package, cook it and set it aside until I’m ready to add it to the dish. You can also omit the barley and use quinoa or lentils instead. Serve with crackers and some prepared horseradish for a little extra kick. Serves 6-8.
BEAN AND HAM SOUP
This is one of my all time favorite recipes for fall and winter. This hearty soup is great for lunch, a snack or dinner. I use a ham with the bone in it for additional flavor. You can also use ham base, but I find that most soup bases are loaded with salt! Ham is salty enough without adding more salt. Ask your butcher about a ham soup bone. They can be less expensive than buying a whole ham!
INGREDIENTS
1 Large Ham Bone (with meat)
1 Ham steak (diced) or Leftover Ham (from the bone)
4 - 6 Cups Chicken Broth (you want to be sure the bone is covered in liquid)
3 Stalks Celery (diced)
3 Large Carrots (diced)
1 Medium Onion (diced)
3 Cans Navy Beans or Great Northern Beans (do not drain)
Salt & Pepper to taste
Place all ingredients into slow cooker except for beans and additional ham pieces. You want the flavors of the ham and vegetables to mix together and to slowly cook the remaining flavors out of the ham bone. Cook on low for 6 hours. Carefully remove the bone and any fat or cartilage that may be present. Add ham pieces and beans (do not drain). The liquid from the canned beans will help to thicken the soup. Add a few dashes of hot sauce before serving and of course, salt and pepper to taste. Serves 6-8.
SAUSAGE, SPINACH, TORTELLINI SOUP
I had this soup at a restaurant once and it was so good that I begged the chef for the recipe. Believe it or not…it only has 7 ingredients!
INGREDIENTS
4 Cups Chicken Broth
4 – 6 Italian Sausage Links (Hot or Mild Works)
1 Clove Garlic (Minced)
1 Medium Onion (chopped)
2 Cups Frozen Cheese Tortellini (Thawed)
1 8oz Pkg Fresh Spinach (rinsed and torn into pieces)
2 Tbsp Olive Oil
Fresh Parmesan for Topping Soup (Optional)
In a large skillet, combine olive oil and sausage links. Cook over medium heat until sausage is cooked through (turning at least once) and juices run clear. Remove from heat and slice sausages diagonally. Place all ingredients in slow cooker and add the sausage slices. Cook on low for 4 hours. Add fresh parmesan cheese before serving if desired. Serves 6-8.
STUFFED PEPPER SOUP
If you like stuffed green peppers, but don’t like the hassle of putting them all together, then why not try this soup! It’s got al l the same ingredients that you love, but without all the hassle. Best part, it cooks itself in your slow cooker!
INGREDIENTS
6 Cups Beef Broth
2 lbs Ground Beef (Substitute Turkey or Chicken)
2 Cans (15oz) Tomato Sauce
2 Cans (15oz) Petite Diced Tomatoes
2 Medium Green Peppers (Chopped)
1 Medium Onion (Diced)
1 Tsp Garlic Powder
2 Cups Rice (Cooked / Set Aside)
In a large skillet, brown ground meat over medium heat. Combine all ingredients, except for the rice, in the slow cooker and cook on low 4-5 hours. Add rice and heat through (about 20 minutes). Do not add the rice until this point or it will disintegrate. Serve with cornbread or roll. Serves 6-8.

5 Yummy Chilies To Take The Chill Out Of Winter
I don’t know about you, but as the weather gets colder, the best piece of kitchen equipment I have in my arsenal is my slow cooker! Soups, stews and chilies are the staples around my house. I love them because you can adjust the recipes to make as little or as much as you want. What I love about chili, is that you can also adjust the heat to suit your taste.
“Chili” is defined as a thick stew, typically with meat and chili peppers or other spicy ingredients. That’s what makes it a perfect dish for cold winter weather. The warmth of the stew and the kick of the heat from the chili peppers make it one go-to comfort food that Midwesterners absolutely love. Heck, most towns in the Midwest have some form of chili cook off at least once per year!
The other great thing about chili is that you can put all of your ingredients in a slow cooker and have it done and ready to dive in when you get home from a long day at work or a cold day outdoors.
Below are 5 perfect chili recipes for you to try this winter and don’t forget the crackers!
TRADITIONAL RED CHILI
A red chili is simply that – red. Typically tomato based, this is the type of chili that comes to mind when we hear the word. “To bean or not to bean” is completely up to you on this one.
INGREDIENTS
1 lb Hamburger (80/20) – (Substitute ground chicken or ground turkey as desired)
1 Green Pepper (Chopped)
1 Sweet Onion (Chopped)
2 Cloves Garlic (Chopped)
1 Can Diced Tomatoes (with juice) - 15oz
1 Can Tomato Sauce - 15oz
1 Can Chili Beans – 15 oz
1 Can Diced Green Chiles – 4 oz
2 Tbsp Chili Powder
1 Tbsp Creole Seasoning (no salt) – Click Here for Recipe
1 Tsp Cayenne Pepper (Optional)
2 Tbsp Chopped Jalapeno Peppers (Optional)
Salt & Pepper To Taste
In a large pan, brown ground meat on the stove top until thoroughly cooked. Place browned meat and all residual juices from pan into slow cooker. Add remaining ingredients to slow cooker and set temperature to low for 8 hours or high for 4 hours. Top with shredded cheddar cheese, diced onions, sliced jalapenos and serve with crackers. Serves 6-8.
VERDE CHICKEN CHILI
Any chili that does not consist of a tomato base is considered a “white chili”. This delicious version uses chicken breasts or thighs instead of traditional beef.
INGREDIENTS
4 Boneless, Skinless Chicken Breasts or Chicken Thighs (Personal Preference)
2 Medium Onions (Chopped)
2 Medium Green Peppers (Chopped)
1 Can Diced Green Chiles – 4 oz
2 Jars of Herdez Salsa Verde (16 oz ea)
2 Cans Navy Beans (15 oz ea – rinsed / drained)
1 Cup Sour Cream
½ Cup Fresh Cilantro (minced)
1 Cup Pickled Jalapeno Slices (Optional – can be adjusted according to your preference or omitted completely)
Place chicken pieces, onions, peppers, jalapenos and chiles in slow cooker. Pour salsa over top. Cover and cook on low 5-6 hours or until chicken is tender. Remove chicken and cool slightly for easier handling. Shred chicken pieces and return to slow cooker. Add beans, sour cream and cilantro. Heat through (about 30 minutes). Top with additional sour cream, Monterey Jack cheese or tortilla chips. Serves 6-8.
TRIPLE THREAT CHILI
Red based chili with three times the beans and three times the heat! This one is not for the timid!
INGREDIENTS
1 lb Ground Beef (80/20) - (This is also great using pork!)
1 Green Pepper (Chopped)
3 Roasted Red Peppers (Chopped)
1 Medium Onion (Chopped)
2 Cloves Garlic (Chopped)
1 Can Tomato Sauce - 15oz
1 Can Diced Tomatoes with green chiles (with juice) - 15oz
1 Jar Herdez Casera Salsa (Hot) – 16 oz
¼ Cup Chopped Jalapeno Peppers
1 Can Red Kidney Beans – 15oz (rinsed / drained)
1 Can Chili Beans (with sauce) - 15 oz
1 Can Navy Beans (rinsed / drained) – 15 oz
Juice of one lime
Salt & Pepper To Taste
In a large pan, brown ground meat on the stove top until thoroughly cooked. Place browned meat and all residual juices from pan into slow cooker. Add remaining ingredients to slow cooker and set temperature to low for 8 hours or high for 4 hours. Top with shredded cheddar cheese and diced onions and serve with crackers. Serves 6-8.
CLASSIC WHITE CHILI
This delicious chili can be made with pork, turkey or chicken. You can use ground meat or you can cube up bite-sized pieces of your favorite meat and add them to the base. The great thing about a white chili, is that you can “tune it up” with as little or as much spice as you like. It’s a very basic blank canvas to start with.
INGREDIENTS
4 Chicken Breasts / Thighs OR 2 lb Pork Loin (See Notes Below)
4 Cloves Garlic (Minced)
2 Medium Onions (Chopped)
1 Box Chicken Broth (or 3 - 15 oz cans)
2 Cans Diced Green Chiles (4 oz)
2 Tsp Ground Cumin
2 Tsp Dried Oregano
1 Tsp Cayenne Powder (Optional)
2 Cans White Beans (rinsed / drained) – (Navy, Cannellini or White Chili OR a combination of all three!)
Salt & Pepper To Taste
NOTES: If using whole pork loin, chicken pieces or turkey tenderloins you will want to add all ingredients EXCEPT for the beans into the slow cooker and cook on low for 5-6 hours or until meat is tender and can be shredded with a fork. Remove meat from slow cooker, shred and return to cooker. Add beans and heat through (about 30 minutes).
In a large pan, brown ground meat on the stove top until thoroughly cooked. Place browned meat and all residual juices from pan into slow cooker. Add remaining ingredients to slow cooker and set temperature to low for 8 hours or high for 4 hours. Top with fresh cilantro and queso fresco or any white mild cheese. Serve with tortilla chips. Serves 6-8.
AUTHENTIC NEW MEXICO CHILI VERDE
A staple of New Mexican cuisine, Chili Verde (Green Chili) can be found in just about any restaurant in the state. The bold flavors of the pork, tomatillos and green chilies give this dish a unique flavor that you won’t soon forget.
INGREDIENTS
2 Pounds Pork Butt or Pork Loin
2 Large Onions (Sliced)
4 Cloves Garlic (Minced)
1 lb Tomatillos (peeled, cleaned and chopped) – You can substitute green tomatoes if needed
2 Poblano Peppers (seeded and chopped)*
2 Anaheim Peppers (seeded and chopped)*
1-2 Jalapeno Peppers (seeded and chopped) – use gloves!
1 Bunch Fresh Cilantro (chopped finely)
4 Cups Chicken Broth
1 Tbsp Dried Oregano
1 Tbsp Ground Cumin
1 Tbsp Ground Coriander
2 Bay Leaves
Juice of 1 Lime
(Cornstarch & Water Slurry)
*Poblano and Anaheim Peppers are very mild. You can always kick it up by using Serrano, Korean or Thai Chiles so long as they are GREEN. That’s the whole point of this dish….the greener the better!
Dice pork into bite-sized pieces. (You can also ask your butcher to do a coarse grind through the sausage grinder). Add pork pieces and all remaining ingredients into slow cooker. Cook on low for 8 hours. If your chili seems a little thin, you can use a few tablespoons of cornstarch mixed with cold water (slurry) and stir it into the chili to thicken it without adding any additional flavor to your dish. Serve with lime wedges and fresh cilantro to garnish. Serves 6-8.
