LOVES PARK — Super Bowl Mongolian Grill and Sushi, a new Asian-fusion restaurant with build-your-own bowl and an all-you-can-eat sushi bar, celebrated its grand opening Friday at the corner of Riverside Boulevard and Forest Hills Road.
The owners cut the ribbon on the restaurant, 1550 E. Riverside Blvd., in a ceremony with Loves Park city officials and The Parks Chamber of Commerce.
“I’m very happy to welcome all of you to our new restaurant,” said Bill Lin, who owns the restaurant with Sam Lin. “We are proud to offer Mongolian grill and sushi that’s fresh, delicious and made for everyone to enjoy. Our goal is to bring great food and a joyful dining experience to our community.”
The restaurant started with a soft opening at the beginning of the month before the grand opening celebration Friday.
Lin said he hopes the restaurant becomes known for its delicious food and great service. This is the ownership team’s first business in the area, but they have different restaurants in Minnesota, Chicago and California.
“We see a lot of potential in the city,” said Sam Sam, the restaurant’s manager. “We’ve only been open two weeks, but each day it’s getting better and better.”

The restaurant has a variety of fresh sushi and sashimi. You can also create your own stir-fry bowl by selecting from an array of ingredients before handing it over to the chef to cook in front of you. There are also a variety of fried rice and noodle options, soups, salads, rolls and other entrees.
The location had previously been a Hardee’s on two separate occasions, with the most recent iteration closing about seven years ago. It was also previously a Dunkin’ Donuts. The owners spent about 10 months renovating the space in preparation for the opening.

Mayor Greg Jury said the food and service were great at the restaurant, and he expects it to do well given the sports facilities being developed directly north of the property.
Elite Sports Center, 6800 Forest Hills Road, opened its 10,000-square-foot indoor training grounds in early September and it is busy developing an additional 24,000-square-foot facility. Athletes at those facilities will be looking for places to eat nearby, Jury said.
“Getting a business in here is awesome given the fact we’re in the middle of adding facilities to the north of it, which is going to bring a lot of people in here,” Jury said. “This gives them another choice to go.”
