Former Subway in Machesney Park to become first Sassy Mac Boys restaurant

MACHESNEY PARK — A food truck that serves up gourmet takes on a classic comfort food is preparing to open its first restaurant.

Sassy Mac Boys, which was founded by Donald Czyzyk nearly two years ago, plans to turn a former Subway restaurant at 10223 N. Second St. into its first brick-and-mortar home. The restaurant is in a business strip in front of Spider Company Inc. near the northeast corner of North Second Street and West Lane Road.

“We’ve been growing like a weed, and obviously a restaurant location was next,” Czyzyk said. “For me, it was a debate of — do I do more of a sit-down, family-style restaurant or more fast food casual style. I really want to see the company grow and become a franchise, so a fast food casual restaurant was the best option for that.”

Czyzyk plans to document on social media the transition from Subway to Sassy Mac Boys, but he doesn’t expect that to be a long process. The goal is to open by mid-November.

“I have more energy than the energy bunny. I don’t sit around,” Czyzyk said. “We are hoping within 30 days to completely transform that space and be open.”

The food truck has built a following for its freshly prepared macaroni and cheese that’s loaded with hearty options such as pulled pork, lobster, crawfish, brisket, chicken teriyaki and sausage, among other options. Czyzyk hopes to add more offerings, including seasonal specials, at the brick-and-mortar location.

He also plans to connect with large nearby companies such as Spider and Hennig Power Protection to create an employee discount program when they dine at Sassy Mac Boys.

The opening of the first brick-and-mortar comes after a year of growth for Sassy Mac Boys. In August, it unveiled a new 24-foot trailer to upgrade its food truck and catering business. It also has a BMO Center kiosk that will debut this Saturday when the Rockford IceHogs have their home opener against the Milwaukee Admirals.

“We’re full steam ahead,” Czyzyk said. “We’re going to grow and we’re going to grow rapidly.”
